Ultra-chic dining in Palm Springs Uptown Design District
Vaulted in the concrete and steel history of TRIO’s front entrance is a wall safe, a time capsule dating back to the landmark building that was once an Old Las Palmas bank. Together, operating partner Tony Marchese and Executive Chef/co-owner Mark Van Laanen, have invested in their dream restaurant, banking on simple comfort food with a very contemporary flare. In less than a year, their first venture together has paid off substantially.
From opening day, TRIO Restaurant is Where Palm Springs Eats and Drinks. With a mid-century multi-room space, complimented by progressive furnishings (including a 5 ft. rubber chandelier in one of the formal rooms) TRIO’s American modern flare and Midwestern fare have critics and diners buzzing. “When you walk in the door its all about comfort, the surroundings and the food,” says Marchese. “Our goal has always been to create a restaurant with a unique energy, where anyone can come dine two to three times a week. We are a proud part of the community in which we love, work, eat and play.”
Tony and Mark engage the community with charitable events like sold out dinners to support music in education and The Art Institute of Palm Springs High School, Dine Out for Life, the Palm Springs International and Short Film Festivals and Hollywood’s Biggest Night Oscar Party supporting AIDS Assistance Program.
The extensive menu features a variety of fish, steak, organic salads plus seasonal items from local growers and farmers. From starters like his signature Wisconsin cheese plate, to Lamb Shank, braised in Burgundy, rosemary and garlic, served with lentils, Mark changes up the menu often.
